Stepping back into the world of food blogging, we give you Grilled Mexican Street Corn inspired by Cafe Habana. With 4th of July around the corner you will need some new ideas on how to eat this American side. Why not throw in a little Mexican flair?
Grilled Mexican street corn is a perfect way to use up summer corn. If you are lucky enough to have a roof in NYC or live somewhere with an outdoor space, get out there and grill up this DIY delicious side.
- 4 Ears Fresh Corns
- Olive Oil Spray
- 1/4 cup mayonaise
- 1 cup Cotija cheese (Queso Fresco)
- 1 tsp Chili Powder, or to taste
- Juice from 1 lime
- Cilantro leaves, to garnish
What to do:
Spray the corn and grill on medium-high heat either on a grill pan or the real thing for about 15-20 minutes. Rotate occasionally so that all sides get a little love. Stir together the mayonaise, cheese, and lime juice. Slather the mixture on the cobbs. Garnish with cilantro and chili powder, and dig in!
